French toast has always been a weakness of mine. I can never resist snagging a bite (or two) off of my friend’s plate during brunch. Rarely ever do I actually order an entire meal for myself…it is just TOO much ya know?!
This all changed when I discovered how to make my OWN french toast at home. Whats even better is that they’re VEGAN. That means no dairy, less fat, and all the goodness you would expect out of a wholesome meal. This recipe is EXTREMELY easy and worth giving a try. 1 tablespoon ground flaxseeds
2 tablespoons whole wheat flour
1 cup non-dairy milk (almond or soy)
1 small loaf sourdough bread
1 tablespoon nutritional yeast
1 teaspoon cinnamon
1 teaspoon nutmeg
1 In a bowl, mix together the ground flax seeds and whole wheat flour. Slowly whisk in the non-dairy milk. Allow the mixture to blend for at least 10 minutes. The flax seeds act as a glue allowing the mixture to stick to the bread. It generally replaces eggs in many vegan recipes.
2 After 10 minutes, slowly mix the mixture and add in the nutritional yeast, cinnamon, and nutmeg.
3 Coat a pan, skillet, or griddle with oil (I like using canola oil) then heat to a medium heat. Cut the bread into 1 inch slices and coat in the mixture on both sides. Cook on the pan for 2 minutes on each side or until golden brown. Serve with syrup and enjoy.
