Buddha bowls have been absolutely killing it this year. It is currently listed as the top trend of 2017! The quick and easy components make it the ideal lunch or dinner recipe. After my recent trip to Irvine, California, I have been absolutely obsessed with buddha bowls. Here I share my extremely easy recipe. - Mixed greens of your choice (kale, spinach ect.)
- Cucumber or zucchini
- Boiled broccoli
- Corn (canned)
- Chickpeas (canned)
- Sesame seeds
- Soy sauce
- Sesame oil
Start off by cooking your quinoa. This step takes the longest. Simply follow the directions on the package and cook the quinoa until your liking. You can also substitute out quinoa for rice if you like!
Wash and cup up all the veggies into bite size pieces. Next, cook the mushroom. I like to sauté the mushrooms on a skillet and allow it to cook off.
Wash and drain the chickpeas and either pop them into the oven for 20 minutes to toast or simple eat as is.
To assemble the bowl, simple mix the quinoa and mixed greens together and place into a large bowl. Layer on your mushrooms, boiled broccoli, carrots, chickpeas, beets, pineapple, and avocado. If you like, sprinkle on some sesame seeds!
THE SAUCE: for the sauce, mix 2 tablespoons of soy sauce with 1 teaspoon of sesame oil.
