If I could eat one thing and one thing only, it would be tofu. Boiled, baked or fried, tofu is one of the healthiest and most filling sources of carbohydrates that you can consume. Not to mention it is incredibly easy to make! I love it because if I am on a crunch for time or am on a tight budget, I can depend on any of my tofu recipes to save the day. Wondering how to you incorporate more tofu into your life? These are three incredibly easy ways to do so! Lets get started (:
Boiled tofu is perfect in soups! You can easily make a chicken soup and add in cubed tofus or if you’re making a veggie soup, cubed tofu can add texture and density to your soup base. If you can also boil tofu in a small pot and eat it over rice. All you need is some seasoning like salt, pepper, or furikake to make it POP!
Baked tofu is my FAVORITE way to cook tofu. Mind you that it does make longer to cook, but it is oh so worth it in the end. I cut up my tofu in larger pieces (about 1.5inches x 1.5inches) and placed in a marinade of choice. If all fails, simple soy sauce will do the trick. Tofu is like a sponge, so the longer you soak these babies in the marination, the better! I would aim for about 2-3 hours or OVER NIGHT if time permits. Next, place the tofu blocks into a baking pan and lay them out evenly. Bake in the oven or toaster oven for 20 minutes on each side. Serve over rice, salad, or on its own (yes, it is THAT good). Fried tofu is the last option I would go for, only because I not a huge fan of oily food. However, if I do ever fry my food, I always ALWAYS go for canola oil non-stick cooking spray! If you buy tofu with the skin on, you can directly fry the tofu on the pan. If you buy the blocks of tofu that has no skin, it gets a bit more tricky. You would have to coat them in some way. When I fry my tofu, I can be pretty extra but hey, its very rare that I do this so yolo.
I start off my treating my tofu like a piece of chicken. I cut them into vertical pieces, coat them in whole wheat flour, eggs, then…PANKO CRUMBS. Yup. Panko coated tofu will change your life (for the better). You can totally just bake these babies as well! As always, serve over rices and enjoy.
